Eid-ul-Fitr + Dim Sum + Homemade Granola: July 26 - August 1 2014

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful


This week brought us the celebration of Eid-ul-Fitr. The ending of the month of Ramadan is marked by this day of prayer and feasting. I pray that the Almighty accepts all of our efforts during the blessed month, and that He allows us to live through many more - Ameen!

Little things that made me happy this week:

1. A new baby girl being born in our family!
2. A new baby boy born to an old friend!
3. Eid breakfast!
4. Coffee, after a whole month without it!
5. Eid lunch cooked by my mother!
6. Fresh mangoes for dessert!
7. Buying a mini doughnut tin!
8. Reminiscing about the good old days with friends - can we please turn the clock back?
9. The sweetest sweetcorn ever!



Saturday: Spices ready to marinade lamb chops with.
One of my favourite side dishes ever ..
Steamed carrots, peas and cherry tomatoes seasoned simply with salt and black pepper
Iftar was Lamb Chops, Pulao Rice, Steamed Vegetables
Along with a little leftover Potato Salad.
Iftar goodies from family friends - Samosas, Pakoras, Kebabs, Spinach Tart, Stuffed Naan.

 Sunday: Marinated chicken about to be coated in fresh coriander.
And, cooked!
I made a blog favourite - Chilli Chips!
The chicken was ready for the final Iftar of the month.
The last Iftar - Coriander Chicken, Lamb Pulao, Chilli Chips, Steamed Vegetables.



Monday: Eid Mubarak from my family to yours!

After a few hours sitting in the marinade, they're ready to be roasted.

.. and ready for Eid lunch!

Along with Lamb Chops and Potato Shorba ..
Cucumber, Tomato, Lettuce
Steamed Carrots, Peas, Cherry Tomatoes
And, plenty of Iced Drinks!
Time for dessert in the garden.
Sweet Alphonso Mango and Vanilla Ice Cream swirled with Mango Sorbet
My mini doughnut pan arrived - cannot wait to use it!
Ice cream for dessert again in the evening - Vanilla Ice Cream and Columbian Coffee Ice Cream!



 Tuesday: Breakfast was Toast with Peanut Butter and Strawberry Jam, Coffee.
Eid leftovers were still rolling around - this is Sweet Rice (Zardah) with cherries, pistachios, raisins and almonds.
At dinner, I mixed together garlic sauce, mayonnaise and fresh lime juice.
I mixed together lettuce, cucumber, soy sauce, sesame oil and vinegar.
I toasted together cooked roast chicken, sweet chilli sauce and lime zest.
I toasted up wholemeal baguettes.
And, stuffed everything into the baguettes.
This was my take on this recipe and was so good - crispy lime chilli chicken, salad and garlic sauce in a toasted baguette. 


Wednesday: Breakfast was Boiled Eggs with Toast.
It was quite warm here so I had a little Lemon Sorbet.
For dinner, we made a dough out of self-raising flour, salt and milk.
I mixed together cooked roast chicken, fresh coriander, grated ginger, lime juice, tomato ketchup, Worcestershire sauce, brown sugar, mustard, maple syrup, vinegar, red chilli powder, salt and smoked paprika.

We rolled out discs of the dough and stuffed them with the filling.

Half were deep fried. 
My take on this recipe - BBQ Chicken Dim Sum with Soy Sesame Chilli Dipping Sauce. Full recipe for the amazing dipping sauce can be found here!
The pastry was crispy on the outside and really, really fluffy inside - I think because of the combination of self-raising flour and milk.
We also experimented with steaming them.
And, they turned out way better than the fried ones!
It was almost as if the filling was wrapped around soft pieces of bread.

Thursday: The last day of July 2014 - the month that brought us driving tests, a lot of fruit and Ramadan.
Lunch was the leftover Dim Sum Dumplings from the night before.
The best part was the dipping sauce - a blend of chilli sauce, soy sauce and sesame oil.
There was still leftover Sweet Rice floating around.
I made Homemade Granola using oats, brown sugar, honey, vegetable oil, dried berries, raisins, walnuts, almonds, dried mango and cinnamon.
Can't beat a sliced orange!

Dinner was leftover chicken sliced onto a soft bun with avocado paprika mayo, cucumber and tomato.



Friday: Breakfast was Mango Yoghurt with Homemade Granola.
Lunch was a sandwich - cucumber, tomato, mature Cheddar and pickle.
Dinner was my favourite meal from the week (it even beat the Eid lunch).
Sweetcorn and Courgette Pasta
Brown 1 courgette, diced in a little olive oil until golden brown. Add in the corn from one cob, salt, pepper and 1/2 teaspoon of butter. Saute until the corn is golden brown - about 3 minutes. Boil up 1 mug of pasta, and toss with the veggies. Add in a splash of the pasta cooking water, and season with a little mature Cheddar. Enjoy!
