Cauliflower Cheese

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Cauliflower Cheese. In my opinion, it is one of the ultimate comfort foods, and somehow it always reminds me of being a child. My mum used to make this a lot when I was at primary school. For those of you who have no idea what Cauliflower Cheese is, it is florets of cauliflower in a cheese sauce, topped with more cheese and then baked until golden brown and bubbly.

A Simple List of Ingredients:

1. Cauliflower
2. Milk
3. Plain Flour
4. Salt and Pepper
5. Mature Cheddar Cheese
6. Butter
7. English Mustard

Bismillah, let's cook! 




Take 1 cauliflower, cut off the stems and slice into florets. 




Bring a pan of salted water to the boil, and add the florets.




Cook for 4 minutes, or until just cooked.




Drain the cauliflower. 




Butter a shallow ovenproof dish.




Spread the florets into the dish, and set aside whilst you whip up the cheese sauce.




To make the cheese sauce, melt 2 ounces butter in a saucepan. 




Add 2 ounces plain flour.




Cook, stirring constantly, for 1 minutes.




Take 1 pint milk.




Take the pan off the heat, and gradually add the milk, stirring constantly.




Place back on the heat, and bring to a boil. Make sure you are still stirring constantly. 




Remove from the heat, and add 3 ounces grated mature Cheddar cheese.




Add 2 teaspoons English mustard.




Season with salt and pepper.




Stir until well combined.




Pour the sauce over the cauliflower. 




Top with more grated mature Cheddar cheese.
Bake in a preheated oven at Gas Mark 6 for 20 minutes or until golden brown and bubbling.




Serve hot with steamed veggies, and relive your childhood!
