Grilled Vegetable Pasta Salad

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Grilled Vegetable Pasta Salad. It is perfect for lunch or as a snack, and is so easy to prepare. Make a batch of this, and keep it in the fridge for a day or two and the flavours will intensify even more, making it even more tasty. You can use any vegetables you like, and make this salad your own.

A Simple List of Ingredients:

1. Garlic
2. Olive Oil
3. Bell Peppers
4. Courgettes
5. Mushrooms
6. Cherry Tomatoes
7. Red Wine Vinegar
8. Salt and Pepper
9. Pasta 

Bismillah, let's begin!

Preheat the oven to Gas Mark 6.


Take 1 whole garlic bulb.




Slice in half through the middle.




Place onto a piece of foil, and drizzle with olive oil.




Wrap tightly in the foil, and bake in the oven for 45 minutes.




Cool the garlic completely.




Cook 2 cups pasta in boiling salted water.




Heat a large grill pan, and lightly coat 2 sliced bell peppers with olive oil and grill for 5 minutes on each side.




Set the grilled bell peppers aside.




Slice 2 courgettes in half, lightly coat in oil and grill for 5 minutes.




Set the grilled courgettes aside.




Grill a handful mushrooms, 1 sweet red pepper and a handful cherry tomatoes, and set aside.




To make the dressing, place the roasted garlic cloves (without the skin) into a large bowl.




Add 3 tablespoons red wine vinegar.




Season with salt and pepper, to taste.




Add 2 tablespoons olive oil.




Stir well to combine.




Slice all the vegetables into bite-sized pieces and add to the bowl.




Season with salt and pepper, to taste.




Stir well to combine.




Add the cooked pasta.




Stir to combine.




This salad tastes great there and then, but is even better the next day!
