Mango Lassi.

It's mango season!
I don't know about you guys but right now my fridge is overflowing with sweet Pakistani mangoes.
We literally have an entire shelf devoted to them. They stay lovely and chilled in the fridge ready to be eaten as they are, blended up into milkshakes and lassi or used as a topping for mini mango cheesecakes.
I will most definitely be sharing the mango cheesecake recipe soon. The past few days were spent baking up to 80 mini cheesecakes. Every year during Ramadan, I like to distribute some sort of Iftar treat to family and friends. This year, it was the turn of the mini cheesecake. I made three types: the classic vanilla with strawberry, a really decadent Nutella and the mango.

All three were delicious but the mango was the one that made the most sense in this Summer season. I feel like with mangoes, we wait all year long for those sweet Pakistani ones and when they finally arrive, we're inundated with boxes and are frantically looking for ways to use them all up.
Whizzing them up into a creamy mango milkshake has always been my go-to but this year, after mastering the classic version, I wanted to make a mango lassi. I shot this recipe a few weeks back with a mediocre supermarket mango but cannot wait to blend it up again this week with the real deal. The flavour from an alphonso mango cannot be beaten. The other lassi ingredients compliment its sweetness well: thick yoghurt as a base, a squeeze of lime for a hit of sour and a pinch of ground cardamom for a subtle spice in the background. Memorise the recipe for you'll be making it all Summer long.

A Simple List of Ingredients:
1. Mango
2. Ice
3. Plain Yoghurt
4. Ground Cardamom
5. Milk
6. Lime Juice
7. Soft Light Brown Sugar

Bismillah, let's begin!

Take 1 large ripe Mango. You can also use mango puree and I would add in about 150ml and then go from there. You can also use frozen mango chunks - I would start with about 100g.

Peel the mango. Now, everyone has their own method of doing this and my way is with a potato peeler.

I feel that with the peeler, I don't waste too much of the flesh. You do have to be careful though - peel slowly especially when things get sticky.

Once the mango has been peeled, carefully chop it up into chunks and get rid the stone.

Pop the chunks into your blender. 

Add in 5 Ice Cubes.

Blend until the mango is smooth and the ice has all broken up.

Then, add in 1/4 teaspoon Ground Cardamom. If you're not a fan, leave it out or sub with ground cinnamon or ground ginger.

And, add in 125ml Plain Yoghurt. I used my favourite whole milk plain yoghurt but Greek yoghurt would be delicious here too.

Blend until smooth and well combined.

Pour in Milk, to taste. The amount of you add is completely up to you. How do you like your lassi? Thick or thin?

Squeeze in about 1 tablespoon Lime Juice. This is completely optional but I like how the sharp lime cuts through the sweetness of the mango.

Finally, add in Soft Light Brown Sugar, to taste. How much you add depends on how sweet your mango is. You can also use white sugar instead.

Give the lassi a final whiz and we're done!

Pop it into a nice jug if you can be bothered or else just pour it straight into glasses.

Lassi is best served fresh especially when it has mango in it. So, pour it out and serve it up!

Prep Time: About 10 minutes.
Cook Time: None!
Serves: About 2 people.

Ingredients

1 large ripe Mango
5 Ice Cubes
1/4 teaspoon Ground Cardamom
125ml Plain Yoghurt
Milk, to taste
1 tablespoon Lime Juice
Soft Light Brown Sugar, to taste

Prepare the mango:
Peel and roughly chop the mango. I use a potato peeler to do this - you'll only need the mango flesh. Get rid of the skin and stone.

Blend:
Put the mango chunks and ice into a blender and blend until smooth. Add the ground cardamom and yoghurt. Blend to combine. Pour in the milk, lime juice and brown sugar. Blend until you're happy with the consistency. Serve immediately.
