Microwave Poppadoms with Spicy Onion Relish.

The perfect start to your next Indian meal!
This recipe idea came from one of you guys who after seeing me make my poppadoms in the microwave on my Instagram Story, asked if I had a recipe for an onion relish to go with them.
I'm not the biggest raw onion fan but was in the mood for a savoury snack last week so gave this one a go.

The relish is not as strong as I may have expected because the onions are soaked in an ice water to get the edge off them. Then, they're stirred up with tomato products, cumin seeds and my favourite additions of coriander, green chillies and mint sauce. The relish is great with anything and everything but we had poppadoms in mind.

I almost always have uncooked poppadoms in the house and have been making them in the microwave as opposed to the traditional deep-frying for a few years now. It takes about one minute to microwave one poppadom and they come out just as crispy as their deep-fried counterparts.  

The crispy poppadom goes so well with this tangy, spicy onion relish. Great as a vegan and gluten-free starter or snack. But be warned, the two together are very addictive!

A Simple List of Ingredients:
1. Onion
2. Cumin Seeds
3. Red Chilli Powder
4. Tomato Ketchup
5. Tomato Puree
6. Salt
7. Fresh Coriander
8. Green Chillies
9. Mint Sauce
10. Uncooked Poppadoms

Bismillah, let's begin!

Let's start with the very addictive relish. Peel and thinly slice 1 large Onion.

Put the slices into a bowl of iced water. This is just cold water with a few ice cubes. Place the onions into the fridge for 1 hour. This will help to get rid of that really strong raw onion taste and also soften them a bit.

After 1 hour, drain the onions and ...


... pat them dry with paper towels.


And, place into a mixing bowl.


Meanwhile, toast 1 teaspoon Cumin Seeds in a dry pan until fragrant. 


Place them into a bowl.


Add 1/2 teaspoon Red Chilli Powder. You may add more or less depending on how spicy you want the relish.


Next, add in 3 tablespoons Tomato Ketchup.


And, 1 tablespoon Tomato Puree.


Sprinkle in a little Salt, to taste.


Mix everything up!

Add the sauce to the onions.


And, give everything a really good mix up.


At this point, check the relish for your preferred consistency.


I felt that it could be a little bit more saucier and so squeezed in more ketchup and tomato puree.


Also, add in the following ingredients if you want an extra kick of flavour:
Small handful Fresh Coriander, finely chopped
1-2 Green Chillies, finely sliced
1-2 teaspoons Mint Sauce


Give the relish a mix and then pop it into the fridge for 45 minutes to let the flavours mingle.

Before you want to serve, make the poppadoms. You can just buy cooked ones and serve them straight away but I used these uncooked ones and made them in the microwave. So easy!

The uncooked poppadoms look like this!

To make one poppadom, place one disc onto a plate.

Heat it for 30 seconds then flip.

Heat again for a further 30 seconds and maybe a little longer until ...

... crispy and puffed. Continue making as many more as you want.

When the poppadoms and relish are ready, we can serve!

Crack those poppadoms and enjoy with the spicy relish. So addictive!

Microwave Poppadoms with Spicy Onion Relish.

Quick poppadoms served with a crunchy tomato onion relish.

Prep Time: About 2 hours including chilling time.
Cook Time: About 1 minute per poppadom.
Serves: About 4 people as a starter/snack.

Ingredients

For the Spicy Onion Relish
1 large Onion, peeled and thinly sliced
1 teaspoon Cumin Seeds, toasted in a dry pan until fragrant
1/2 teaspoon Red Chilli Powder
3 tablespoons Tomato Ketchup
1 tablespoon Tomato Puree
Salt, to taste
Small handful Fresh Coriander, finely chopped
1-2 Green Chillies, thinly sliced
1-2 teaspoons Mint Sauce

For the Microwave Poppadoms
Uncooked Poppadoms

Prepare the onions:
Put the sliced onions into a bowl of ice water and chill in the fridge for 1 hour. Remove from the water and pat dry.

Mix up the relish:
Mix the sliced onions with the rest of the ingredients. Chill in the fridge for 45 minutes. Taste and adjust the seasoning, as needed.

Make the microwave poppadoms:
Heat 1 uncooked poppadom on a plate in the microwave for 30 seconds. Flip and heat for a further 30 seconds or until puffed and crispy. Continue making more.

Serve:
Serve the crispy poppadoms with the relish as the perfect starter or snack.
