Folded Cheese Pepper Omelette.

The easiest recipe to start 2018 with!

I cannot believe it's taken me nearly six years of blogging to finally share an omelette recipe.
There have been plenty of egg recipes because we are a family of egg lovers. We'll happily eat them at breakfast, lunch or even dinner. In fact, just two nights ago I cracked one over the savoury crepe I was making. It was delicious although my crepe was a little too buttery for my liking. Is that even possible?! 
But there is one egg dish that has always been my nemesis and that is the omelette. I know! Can you believe it? I've made so many bad ones in the past. They tasted good but I would always break them. Until I learnt the trick to making a good omelette. Use a good pan and once it's settled, don't touch it too much which will allow the omelette to set properly making it easier to flip or fold.

This folded cheese pepper omelette is one that I made at the start of the month. Unfortunately, 2018 has been full of a cold and cough for me so far. And, when you're ill and not in the mood to cook anything complicated, an omelette is the answer. You can serve yours with a green salad but I ate mine with hot chips and baked beans because it's January and only hot food will do.

A Simple List of Ingredients:
1. Vegetable Oil or Butter
2. Red Bell Pepper
3. Yellow Bell Pepper
4. Spring Onions
5. Salt and Pepper
6. Eggs
7. Cheddar

Bismillah, let's begin!

Let's start by chopping up our vegetables. You can use any veggies you want. I always find an omelette is the best way to get rid of any odds and ends in the vegetable drawer. My favourite omelette additions include: onions, green chillies, fresh coriander, mushrooms, spinach and tomatoes.

Dice up 1/2 Yellow Bell Pepper and 1/2 Red Bell Pepper. Slice up 2 Spring Onions.

Next, take your best non-stick frying pan. Drizzle in a little Vegetable Oil (or butter for more flavour!) and heat over a medium heat.

Throw in the bell peppers, spring onions and a touch of salt and pepper. Stir fry for a minute.

Then, grab any lid you can find and cover the pan for 3 minutes over a low heat.

We want the vegetables to be a little soft before we can add them to our eggs.

Speaking of, crack 2 large Eggs into a bowl.

Season with a little Salt and Pepper. Feel free to add in any other ground spices that you're a fan of. Some of our omelette favourites include basar curry powder and Old Bay seasoning.

Beat the eggs with a fork.

Add in the peppers and onions.

Beat them in.

Pop the pan back onto a medium heat. Add in a more Vegetable Oil or Butter, if needed.

Once the pan and oil are hot, pour in the egg mixture.

Give it a quick stir then let it cook until the top has just set. When you shake the pan, the omelette should easily move.

Then, sprinkle 30g grated Cheddar over one side.

Then, gently fold the omelette over.

And, let the omelette cook gently until the cheese has melted and the middle is cooked.

Done! So proud of me right now! I made an omelette that didn't break!!

I mean, do you see that melted cheese oozing out up there?!
I served my omelette with baked beans and oven chips.

Folded Cheese Pepper Omelette.

A fluffy omelette studded with bell peppers and filled with melted cheese.

Prep Time: About 10 minutes. 
Cook Time: About 10 minutes.
Serves: 1 hungry person.

Ingredients

Vegetable Oil or Butter, as needed
1/2 Red Bell Pepper, diced
1/2 Yellow Bell Pepper, diced
2 Spring Onions, sliced
Salt and Pepper, to taste
2 large Eggs
30g Cheddar, grated

Heat a little vegetable oil or butter in a non-stick frying pan over a medium heat. Add the bell peppers and spring onions along with a little salt and pepper. Stir fry then cover with a lid for 3 minutes.

Beat the eggs with a little salt and pepper. Add the peppers and onions and whisk well.

Add a little more oil or butter to the frying pan over a medium heat. Once hot, pour in the egg mixture. Let it cook gently until the top is just set and you can easily feel it lifting from the bottom of the pan.

Sprinkle the cheese over one side then carefully fold over. Cook for a few minutes until the cheese has melted and the middle is cooked.

Serve with a green salad or hot chips and baked beans.
