Microwave Chocolate Mug Cake.

You guys, this is it. My first ever microwave mug cake.
I've seen these all over the internet but just never plucked up the courage to try one out for myself.
Truth be told, I was a bit of a microwave snob. That was until, a really dark and cold Wednesday night a couple of weeks back. It had been a long day and I wanted a quick treat after dinner.

You would think that I, being the Muslim girl that bakes, would have plenty of emergency baked goods stashed in the fridge or freezer but a quick look and we had nothing of real substance. There were a few cookie dough balls but nothing that would satisfy my mood for hot chocolate cake and custard.

Anyway, somehow the microwave mug cake entered my mind. This was the exact moment that these cakes were invented for. A quick Google later, I had a recipe in mind. The best part was that all the ingredients were simply stirred up in my giant soup mug. Then, after 1 minute and 40 seconds in the microwave, the cake was done. I was still a bit dubious. A cake can't possibly be baked so quickly? But, when I opened the microwave door, the sight that greeted me was enough to prove all my mug cake doubts wrong. A well-risen, almost like a souffle, chocolate cake that was a cross between a chocolate sponge, chocolate brownie and hot fudge pudding. We poured hot vanilla custard straight into the mug and all agreed that this was the best quick sweet fix ever. Enjoy!


A Simple List of Ingredients:
1. Plain Flour
2. Caster Sugar
3. Cocoa Powder
4. Salt
5. Baking Powder
6. Butter
7. Milk
8. Vanilla Essence
9. An Egg
10. Chocolate
11. Water

Bismillah, let's begin!

Before we mix this super-quick recipe, let's discuss the mug. I used my soup mug and it's pretty big.

This one is almost like a small bowl. The measurements are 12cm (5 inch) wide and 9cm (4 inch) in height. It's important that you use a big enough mug to prevent any spills in your microwave.

The other great part about this recipe is that the batter is mixed together in the mug as well. Yes to less washing up!

Let's start by adding in 40g (1/4 cup) Plain Flour.

And, 55g (1/4 cup) Caster Sugar.

To give our cake a deep chocolate flavour, we'll use cocoa powder.

Throw in 2 tablespoons Cocoa Powder.

Along with a Pinch of Salt.

Finally, to help things rise: 1/2 teaspoon Baking Powder.


 Let's stir up the dry ingredients.


Grab a fork and get mixing!

Cocoa powder can be notoriously lumpy so I used the back of fork to press out those larger lumps.

That's our dry mix done. Time to add in the wet!

Starting with butter. This is what's going to give our cake such good flavour. Take 45g Butter.

Heat in the microwave for 30 seconds until melted.

Pour in!

Then, 3 tablespoons Milk.

In it goes. I used semi-skimmed but any milk will do.

More flavour: 1/2 teaspoon Vanilla Essence.

Finally, 1 large Egg. Any egg will do whether it's large, medium or small.

Crack it in!

Get whisking with your fork.

Whisk until well combined and you can no longer see the flour.

At this point, the batter would make a pretty good simple chocolate cake. Also, do you see how high the batter is in the mug? It will rise right to the top and sometimes a little over when baked - showing how important it is that you use a large enough mug.

But, we want a gooey chocolate centre. And, that's where 30g broken Dark Chocolate comes in. You can use any chocolate you like.

Place the chocolate over the batter in the centre. They'll sink in as the cake cooks.

Finally, we want a little chocolate sauce with our cake. Basically the microwave version of this hot chocolate fudge pudding and for that we'll need 1 tablespoon Water.

Pour the water over the batter.

And with that, we can bake!


Let's discuss microwaves. This is mine - it's 1000 watts. Every microwave is different so bake your cake according to how powerful your microwave is.

Put the mug into the microwave and heat on full power for 1 minute and 40 seconds.

You'll know it's done when the cake is risen and the sponge is cooked.

Let the cake cool for 5 minutes before eating. It will sink slightly as it cools but that won't affect the flavour one bit.

This mug cake is my new favourite quick dessert. It's a cross between a chocolate cake, brownie and hot fudge sauce pudding - basically the best of everything in one. We love it with hot vanilla custard poured straight into the mug. The best!

Microwave Chocolate Mug Cake.

Prep Time: About 10 minutes.
Bake Time: About 1 minutes and 40 seconds.
Serves: About 2 people.

Ingredients

40g (1/4 cup) Plain Flour
55g (1/4 cup) Caster Sugar
2 tablespoons Cocoa Powder
Pinch of Salt
1/2 teaspoon Baking Powder
45g Butter, melted
3 tablespoons Milk
1/2 teaspoon Vanilla Essence
1 large Egg (but any will do)
30g Dark Chocolate, broken up
1 tablespoon Water

The mug:
Take a large, deep microwave-safe mug. Mine is a soup mug almost like a small bowl - 12cm (5 inch) wide and 9cm (4 inch) in height. It's important that you use a big enough mug to prevent any spills in your microwave.

Mix the dry:
Into the mug, place the flour, sugar, cocoa powder, salt and baking powder. Stir really well with a fork.

The wet:
Add in the melted butter, milk, vanilla and egg. Whisk until the batter is well combined and you can no longer see any of the flour.

The chocolate:
Place the chocolate pieces in the centre and on top of the batter - don't be tempted to push them in. Drizzle the water all over the batter.

Bake in the microwave:
Bake the mug cake in the microwave on the highest setting for 1 minute and 40 seconds. My microwave is 1000 watts and I found that this was enough baking time for me - it gave me a cooked, risen sponge with a gooey centre. With your microwave, you may need more or less time so adjust as needed.

Serve:
Let the cake cool for 5 minutes before digging in and enjoying. We love this on a cold night with hot custard. The ultimate treat!
