Green Chilli and Fresh Coriander French Toast.

Anybody here love an all-day breakfast?
We are big breakfast fans in our house.
It's the one meal that is never missed no matter what. In fact, we love breakfast so much, we'll find any excuse to do brunch or breakfast for dinner.
In our house, we prefer savoury breakfasts over sweet and are always on the lookout for new ideas. Just last week, I tried breakfast fried rice. Rice for breakfast? Who knew?
When all else fails, eggs are always our standby. A particular favourite is spicy french toast. And when I posted the recipe, one of you commented about a version that you made by grinding green chilli and coriander into the egg mixture. Of course, we had to try it.
And, here it is. All you do is blend together eggs and milk with green chillies, fresh coriander and spring onions. Dip in slices of bread, fry and enjoy! The perfect breakfast, brunch or if you're anything like us, a lazy dinner.

A Simple List of Ingredients:
1. Green Chillies
2. Fresh Coriander
3. Spring Onions
4. Milk
5. Eggs
6. Salt and Pepper
7. Bread
8. Vegetable Oil

Bismillah, let's begin!

We begin by simply blending our spicy egg mixture in a bowl.

Into a bowl, place 2 Green Chillies, roughly chopped. You can use more or less depending on how spicy you want the toast to be.

Next, in goes a handful of Fresh Coriander, roughly chopped.

And 3 Spring Onions, roughly chopped.

Next, I poured in 100ml Milk.

And, cracked in 3 large Eggs.

To season, I threw in 1 teaspoon Salt.

And, 1/2 teaspoon Black Pepper. You can add any other dry spices here as well.

Then all we do, is blend up the mixture until smooth.

I used a stick blender to do this.

I also transferred the mixture to a shallow dish to make dipping the bread easier.

To cook, place a frying pan over a medium heat and drizzle in a little Vegetable Oil or Butter.

It's time to dip our bread!

For French toast, bread that's a little stale is always best as it will soak the mixture up better. I used a tiger loaf and sliced it up pretty thick. In total, I used 5 thick slices of Tiger Bread.

Dip a bread slice into the mixture making sure to really get the green bits on as best as you can. The green, spicy bits are under the frothy foam.

Once you've dipped the bread a few times, it's time to cook!

Cook in the hot oil for a few minutes until golden, flipping every now and then. Remove from the pan.

And, continue dipping and frying the rest.

Any leftover egg mixture? I added another egg to mine and made an omelette.

Once the toast is done, serve!

Serve with baked beans or ketchup!

Green Chilli and Fresh Coriander French Toast.

Prep Time: About 10-15 minutes.
Cook Time: About 15-20 minutes.
Serves: Makes 5 thick slices of French toast.

Ingredients

2 Green Chillies, roughly chopped
Handful Fresh Coriander, roughly chopped
3 Spring Onions, roughly chopped
100ml Milk
3 large Eggs
1 teaspoon Salt
1/2 teaspoon Black Pepper
5 thick slices Bread, preferably on the stale side
Vegetable Oil, to fry

Blend everything together:
Place everything except the bread and oil into a mixing bowl. Blend until smooth.

Heat up and dip:
Heat a frying pan over a medium heat. Add a little oil and when it's hot, we can fry. Dip a piece of bread into the egg mixture. I poured my egg mixture into a shallow dish to make dipping the bread easier. Make sure to really cover it with the green bits all over.

Cook:
Fry the dipped bread for a few minutes until golden, flipping every now and then. Continue dipping and frying the rest of the bread.

Leftover egg mixture:
I added another egg to it and made an omelette.

Leftover bread:
Add another egg, some milk and seasoning, dip and fry.

Serve:
Sprinkle over more fresh coriander, spring onions and green chilli. Serve immediately with ketchup or baked beans.
