I still can't believe that it's already February.
Yesterday was such a beautiful day. One of those odd sunny days in the middle of winter that get you really in the mood for summer. We headed out of town and up into the hills - it was so pretty and peaceful up there. Then, back home to bake a lemon meringue cake.

so far, we have a lemon curd cake with a baked meringue on top. and, then ....
disaster! one of the cakes got stuck in the tin. a definite addition to my next recipe disasters!
and, everything was going so well! anyway, let's get on with the filling.
lemon curd sponge with baked meringue + homemade lemon curd filling + lemon cream cheese buttercream.
oh my god, I can't even look at it! so, one of the sponges got stuck in its tin. I attempted to do a little damage control with the icing but it still looks terrible. this was the first time that I baked this cake so if I was to do a full recipe for the blog, there's a million things that I would do differently.

it may have looked terrible but this cake tasted so good! it was very well-received by the lemon lover in this house.
