Lazy Tiramisu + Pitta Perfection + Macaron Attempt: 7-13 February 2015.

This week, I have tried (for the first time), soya milk and homemade yoghurt.

I have attempted macarons after three years, and failed. Do not fear, my friends, I shall try again.
I have made a lazy tiramisu with just whipped cream, sponge fingers and coffee. Sorry Italy.
And, I have cracked the ultimate wholemeal pitta bread recipe and just about got right, a homemade pizza dough.

 Saturday: Today, there was leftover whipped cream (from the trifle!) in the fridge, so I decided to make a Lazy Tiramisu.
I layered coffee-soaked sponge fingers with sweetened whipped cream and grated dark chocolate.
Dusted the whole thing with cocoa powder, let it chill for an hour or two in the fridge, and boom! Dessert!

Leftovers for dinner from Friday night. Fish, rice and spicy carrot pickle.

Sunday: Today there were leftover egg whites floating around after my custard disaster last week. So we made Rasmalai.
Milk powder was mixed with baking powder, vegetable oil and sugar. This is then added to whisked egg whites, left to rest and then kneaded.

Then, it is rolled into balls.

Milk is cooked with sugar and cardamoms. Then, the dough balls are added and cooked. The whole thing is then left to cool completely.
We also tested a wholemeal pitta recipe. Don't mind the banana and apple in the back - I was about to munch them.
The magic ingredient - yeast. Made to foam with warm water and a little sugar.
Dough kneaded.
And, left to rise.
Omelette being made with random bits from the fridge.
This time, cooked potatoes and baby spinach.
Dough risen.
Salad sliced.
Yoghurt mixed.
Chicken marinaded.
Pitta puffed.
Dinner and another recipe test successfully wrapped, alhamdulillah.
And, there is the Rasmalai. Chilled and ready for action.

Monday: We always make a soup to start us off for the week. This week, a Chicken Corn Soup similar to this recipe.
Today's challenge.
I highly recommend that you all try this at least once. No social media and no internet - do it!

Tuesday: Lunch things.
Grilled, spicy chicken breast + boiled eggs + lettuce + cherry toms.
And, ranch dressing.
Lately. :)

 Wednesday: Random fruit snack - this time, sliced bananas and blueberries.
Today, I proved to myself that it is possible to have pizza, from scratch, for lunch, in under an hour.
Boom! Kneaded, proved, rolled, sauced, sprinkled and ready to bake.
On the first quarter: tomato sauce + beef salami + cheese.
Second quarter: tomato sauce + cheese. (my favourite).
Third quarter: tomato sauce + cheese + red peppers.
Fourth quarter: tomato sauce + cheese + sliced jalapeno. (my second favourite).
Oh, and ranch. Because leftovers.
Success story of the day.

Yes. After 3 years of avoiding them, me and the macaron are having a bit of a reunion.
Prepare to hear about plenty of macaron adventures this month, starting with the above. 

I have no words. All I can say is that they were pretty tasty despite completely failing to hold themselves together. Advice and chocolate is much appreciated. 
But look at this. Allah is so amazing. On the day when dinner was about to be one tray of giant macaron, a lovely friend sent over rice. :)

For me, this was not possible in just one day. You should see the state of my hard drive. And my external hard drive. It's not pretty.

 Thursday: Current favourite fruit combo - banana + blueberry + apple. Oh, and a bowl of freshly squeezed oranges. Try it and thank me later.

This was quite hard for me. I think when you actually take note of how many little complaints you make in a day, it'll surprise you. Well, it surprised me anyway.
