Breakfast Apple Crumble

Assalamu alaikum wa rahmatullahi wa barakatuhu!

Because sometimes what a winter morning needs is a crumble for breakfast.

The thought of a Breakfast Apple Crumble ready to bake is probably one of the only things that will get you out of bed on a dark, January morning. Seriously, every morning it is so dark round here. It's so confusing - I'm always convinced it's still the middle of the night. But one look at my phone tells me otherwise and gets me rushing to the bathroom.

This crumble came about when I was going to make this stewed apple recipe. I wasn't really feeling the suggestion to pour warm coconut milk over the apples and enjoy with granola. Somehow, I wanted more. But without doing more. Because it is the AM after all. 

Then, it came to me. Why not cover said apples with granola, pop into the oven until bubbling, and boom! The Breakfast Apple Crumble was born.

Don't think though, that you'll be feasting on all manner of lovely things with this recipe like butter and sugar. Oh no, this is a crumble that you can feel good about eating. Let's find out how to make it shall we?

A Simple List of Ingredients:
1. Apples
2. Coconut Milk
3. Honey
4. Ground Ginger
5. Ground Cinnamon
6. Raisins
7. Granola

Bismillah, let's begin!

Take a saucepan, and put in the apples. You'll need 3 Apples which have been peeled and chopped to bite-size chunks.

Then, sprinkle in 1 teaspoon Ground Cinnamon - or to taste.

And, 1 teaspoon Ground Ginger - or to taste.

Next, for a little sweetness, 1 tablespoon Honey. You won't too much of this because the apples are naturally sweet.

Finally, pour in enough Coconut Milk to cover the apple mixture.

You'll need to stir it up to see how much you need.

There should be enough liquid for the apples to soften slightly.

When you're satisfied with the mixture ..

... pop it onto a high heat.

And, bring to the boil.


Once boiling ..

.. turn the heat right down and cook for 30 minutes.

Give it a stir every now and then, and cook until the apples have softened.

Then, transfer to an oven dish.

And, stir in a few Raisins, to taste.

The raisins are optional but they do add a nice sweetness and I'm obsessed with them. You could also add any other dried fruit too.

Note: I usually do all of the above up to this step the day before because let's face it, I'm not a morning person.
So, if you're like me, at this point, let the apples cool completely and then cover and chill in the fridge overnight.

Whichever way you make this, the next step is to cover the apples with Granola, to taste.

The first time I made this, I used shop-bought granola which was ok but way too sweet for me.

Since then, I've only baked this with my homemade granola which is great because I can control the sweetness. But use whatever you like!

Pop the crumble into a 180C or Gas Mark 4 oven for about 10 minutes until golden brown and bubbling.
It may need a little longer if the apples were made the day before.

Ten minutes is enough time to get your coffee on. Then, spoon out the crumble and enjoy!
You may want to pour on more coconut milk, milk or even custard onto your crumble.

The recipe can be doubled too, if you want a bigger crumble.

When I made a larger batch, I used my homemade granola.

You could also personalize the apples by adding in your own touch. I've tried adding orange zest for extra brightness.

Whatever you decide to do, I hope this crumble becomes a favourite for your winter mornings like it has with ours. It has the perfect combination of soft and crunchy. Tender chunks of sweet apple, spiced up with cinnamon and ginger (to ward off that impending cold) and a crunchy, oaty granola top to finish.
And, forget breakfast, it could even be dessert with a scoop of ice cream. Now we're talking.

Breakfast Apple Crumble

Adapted from Deliciously Ella

Prep Time: 35 minutes approx.
Bake Time: 10 minutes approx.
Serves: 3 people approx.

Ingredients
3 Apples, peeled and cut into bite-size pieces
1 teaspoon Ground Cinnamon
1 teaspoon Ground Ginger
1 tablespoon Honey
Coconut Milk, as needed (I used about ½ tin)
Raisins, to taste
Granola, to taste

Method

Place the apples, cinnamon, ginger, honey and coconut milk into a pan. Stir. There should be enough coconut milk to cover the apples and help them soften.

Place over a high heat and bring to the boil. Then, turn the heat right down and leave to simmer for 30 minutes until the apples are soft.

Put the mixture into an oven dish and stir in the raisins. You could use other dried fruit too.

Let it cool slightly.

Cover with granola and bake at 180C or Gas Mark 4 until golden brown and bubbling.

Serve with more coconut milk, milk or even custard. Enjoy!
