Lettuce Cups + Geese + Pumpkin Pie Spice: 20 September - 26 September 2014

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful







A message to any of you who are going through difficulties:
Yes. Allah knows you are tired. Allah knows it is difficult for you. But you must also know that Allah would never place you in a situation that you cannot handle.
Put your trust in Allah for He loves those who trust Him.
 Saturday: I bought a waffle maker, and it's amazing. I highly recommend buying one - you can make both sweet and savoury waffles in them. And, they cook in 3 minutes! 
The first waffles we made were savoury ones with Cheddar.
Stir your batter, heat the waffle maker, ladle in the batter, pop on the lid, set your timer for 3 minutes, and ..
.. voila!
Pretty soon you'll have a production line going.
We ate ours with fried chicken and gravy. I was supposed to share the recipe last week but you know what life is like! Insha Allah, this week!

Sunday: Give crayons. Adults are disturbingly impoverished of these magical dream sticks. 
Indian tea with my mother on a Sunday afternoon.
Along with a slice of Chocolate Fridge Cake that I made last week!
At dinner, I cooked up chicken mince with onions and peppers. The recipe I adapted can be found here.
I stirred up a sauce with soy sauce, rice vinegar, hot chilli sauce, sweet chilli sauce, crushed red chilli and mustard.
Grabbed some crisp lettuce, fresh limes and spring onions.
Sliced the spring onion finely, and stirred them through the chicken.
And, wrapped the whole lot in the lettuce leaves, squeezed over fresh lime juice and ate with cousins whilst catching up on life in general.
 Monday: Out for a walk. Summer has really turned into Autumn round here.
Feeding the chickens.
And, the cows.
And, the turkeys.
And, a goat or two.
Then, we were met by a gaggle of very loud geese.
The one the others left out :(
Back at home, I cooked the filling for these Cheese and Onion Pasties.
Whilst having more of those Lettuce Cups for lunch.
The pasties were baked for dinner that night and they were pretty good. Recipe is here!
Tuesday: For the past two years, I have baked these Cinnamon Chocolate Chip Cookies in the Autumn. This year I decided to swap the cinnamon for pumpkin pie spice.
All you do is mix together:
1 tablespoon Ground Cinnamon
2 teaspoons Ground Ginger
1/2 teaspoon Ground Cloves
1/2 teaspoon Ground All Spice
Pinch of Ground Cardamom
The recipe is exactly the same as the cinnamon one. I just replaced the orange flavouring with fresh orange zest and the cinnamon for pumpkin pie spice.
I sliced up milk chocolate and divided an egg up. You only need the yolk for this recipe.
Popped some softened butter and soft dark brown sugar into a bowl.
Beat the two until creamy.

While snacking on the worlds sweetest red apple - it was so good!
Added in the egg yolk along with the zest of an orange.

Then, sliced the orange up to snack on too.
I stirred a little pumpkin pie spice into flour.
And, added it to the bowl.
Once it had formed a dough ..
.. in went the chopped chocolate.
A final stir and the cookie dough was ready.

The cookies were rolled in a mixture of pumpkin pie spice and sugar before being baked.

These cookies tasted so good. Warm, sugary and a little spicy from all those delicious spices. And, the hints of fresh orange along with chunks of milk chocolate made them even better - perfect for the beginning of Autumn.

The original recipe is here. Swap the orange flavouring for the zest of an orange, and the cinnamon for the pumpkin pie spice.

I boxed up the rest of the spice mix ready to use in something else. Maybe a homemade version of this?

For lunch, Mum roasted corn on the cob which she brushed with chilli oil and salt. And, I made soup.
And, wow, it was good. Such simple ingredients - you must give it a go!
 Wednesday: Breakfast was my favourite scrambled eggs ever!
We were gifted some of the best scones ever from family friends which we enjoyed with homemade jam.
One of my favourite curries ever for dinner - my mother's Daal.
Thursday: Lunch today was a reminder of my student days when we would eat Tuna Sweetcorn on Crackers at least once a week.
Mix tinned tuna with tinned sweetcorn and mayo, chilli sauce, a little salt and pepper. Serve on wholewheat crackers with salad.
 Friday: Guests for breakfast followed by a late breakfast of my own.
At lunch, I made a Leek and Potato Soup. The recipe I used can be found here.
Earlier in the day, I marinaded chicken for Chicken Tikka Masala.
For lunch, again, I had Leek and Potato Soup. It's such a naturally creamy soup and very warming for this time of year.
Onions, garlic, chillies and fresh coriander slowly browning for the Tikka Masala.
And, here is the finished curry.
We served it with boiled rice, and it was actually quite good even though we did add red chilli powder.

It was really cold here on Friday night and so Hot Chocolate was called for.

A lovely, warming end to a busy week!
