Rainy Sundays + Indoor Barbecues + Iced Coffee: 25 May - 30 May

Can you believe May is already at an end? I still think it's April! 

My thoughts for this week have been all about change. Change is all around us whether we feel it or not. It's like those quotes that say life may seem to be pretty much the same, but when you look back a few years, so much has changed.
Anyway, I've been thinking about the change that all of us can make everyday. Sometimes you might not be having a very good day, but in a split second, everything can change. It's all up to you. Your view on life is you. Simple.
We should be changing every second, every hour of every day for the better. We should be striving to be the best human beings that we can be. It's these little things that really make a big difference in the world.
I hope that made sense!

Saturday: Our weekend usually begins with scrambled eggs of some sort. I cannot stand fried egg whites so I separate an egg and scramble the white with another egg. Then, I cook the yolk on its own.
Lunch was a grilled sandwich made with leftovers. This one had chicken, bell peppers and salad.
A surprise treat came in the form of these frappucinos. We had this one and this one.
Even though it was pouring it down outside!
Dinner was another meal made out of leftovers.
A quick pizza made with garlic and coriander naan, tomato passata, lamb meatballs, pickled jalapenos, red onion, sweetcorn and cheese.


Sunday: The day could not have been greyer. We had such heavy rain here!
A little colour and spice was in order. My mum made a Simple Chicken Curry for lunch. She fried 1 onion until golden brown, and then poured in 1/2 cup of blended tomatoes. She put in 1/2 green chilli, 1/4 tsp red chilli powder, 1/2 tsp salt, 1/2 tsp ground coriander, 1/2 tsp ground cumin, 1/2 tsp curry powder and 1/4 tsp ground turmeric. Mix and let it fry.
Add in a chicken breast, cut into pieces.
Stir it in, and simmer until cooked through.
While the curry cooked away, we snacked on these sweet purple grapes.
Then, we picked fresh mint from the garden for the salad.
The smell of fresh mint is so good.
By now, the chicken curry should be done. You can add more or less water in, depending on how saucy you want it.
I made this delicious salad - the recipe for which I will be posting soon, inshallah.

Finally, a sprinkle of fresh coriander and lunch was ready.
Sometimes the simplest meals are the best. Full of flavour and cooked with lots of love - juicy chicken curry, boiled rice and a spicy, minty salad.
Monday: It was a bank holiday here, and my Twitter feed was full of cinnamon rolls for some reason. Thank goodness, we had a batch of these still in the freezer.
15 minutes in a hot over and a special breakfast was ready! And, the garden was looking very pretty that May morning.

Another one of my fruity favourites at the moment are these doughnut peaches.
This time paired with green grapes.
Lunch was Egg Fried Rice. I used my usual recipe but threw in lots of different veggies that were crowding up the fridge along with chicken salami.
I decided to make Tiramisu on Monday too.
It turned out amazing, and it's completely Halal and contains no eggs. You should really try it out - the recipe is here!
 
Tuesday: We wanted something really quick and simple for dinner - but still homemade, of course.
This Honey Mustard Chicken was just the thing. It's quick, full of flavour and really easy to make. You can get the recipe here!
Wednesday: Dippy Eggs for breakfast.
A runny, soft-boiled egg
With crunchy, wholemeal toast.
Perfect for another rainy morning! It's supposed to be May :(
Dinner was a trip down memory lane with baked potato topped with cheese and onion deli filler - very reminiscent of my student days!
Thursday: A busy morning made better with a lovely delivery from Pearl Daisy!
Dinner turned into a little, indoor barbecue which I'll be blogging about soon. Red onion was sliced ..
.. and more fresh mint was picked.
The star of the show was so yummy, I can't wait to share it with you guys.

Friday: We visited a cute little sweet shop, and it brought back so many memories of when we were little.
After all those sweets, we headed to an adorable gift shop. It's one of those places where you want to buy everything!
I picked up these cute wooden magnetic pegs for my noticeboard.
Along with a bag of sweets!
Filled with bon bons, cola cubes and Scottish tablet.
Starting with the Tablet.

In the evening, we sliced up this.

It was devoured by two of the biggest chocolate-lovers I know.

Before they ran wild in our wild garden! :)

Dinner was a quick curry made with leftover cooked chicken.
