Hot Days + Lemon Cupcakes + Tulips: 26 April - 2 May 2014

Welcome to another week in pictures!




 I hope you've all had a wonderful week.
Everyday is a new opportunity. It's a chance for us to do good deeds and make a difference. Take hold of it and treasure it because it could be your last day! None of us can say that we will live to see tomorrow, so make today count.


Saturday: A spot of early morning baking in the April sunshine.
I made a batch of this recipe.
But had too much batter - so I divided half into cupcake cases.
And, the other half was made into an actual cake.
The cupcakes baked.
And, so did the cake. The kitchen smelt heavenly at this point.
The cake was topped with a crunchy lemony mixture of sugar and fresh lemon juice.
Lemon buttercream was piped onto the cupcakes.
And, then yellow sprinkles were sprinkled on!
The cake was cut.
And, eaten!
I love how these cakes look so spring-like :)
I enjoyed mine with an espresso.
A beautiful plant gifted to us by my aunt :)

Sunday: Following another plane on Flight Radar.
More baking on Sunday, and I decided to bake this Farmhouse Victoria Sandwich Cake which I will be sharing the recipe for soon.
A good tip if you use a KitchenAid or any other stand mixer - cover it with a tea towel to stop any flour flying into your face!
More rain on Sunday!
Dinner was Chicken Noodles.
Using these wholewheat noodles.
Along with Soy Sauce, Chinese 5 Spice and Fish Sauce.
Into a pan, I placed chicken pieces, water, vegetables and the seasonings.
Let them cook covered on a low heat.
Then dried out most of the water on a high heat.
And, tossed in the cooked noodles.
It was really spicy and delicious! Another one of my favourite noodle recipes is Chicken Chow Mein.
Mum had made a Chicken and Okra Curry. You can see her Fried Chicken Curry and her Okra Curry on this blog.

Monday: My mum was talking about Bulleh Shah and I found one of his quotes translated into English.
I made Sweet and Sour Chicken and Veg for dinner using this recipe. It's so easy to make your own at home without using a ready made jar sauce so you guys have no excuse now!
Tuesday: The day started off sweltering hot and beautiful.
It always amazes me how stunning an English spring is. Like I know it's coming each year but every time it still surprises me!
Lunch was a Cold Fruit Salad. Apples, pears and oranges cut up, drowned in fresh orange juice and chilled in the fridge.

I had Fish Tacos on the brain for Tuesday dinner, and so made my version of a Chimichurri Sauce to go with them.
The tacos were so yummy and fresh - the perfect end to a hot day. I'll be sharing the recipe with y'all this week, inshallah.

Wednesday: Daal was on the menu for dinner, and my mum cooked it. This was the tarka using lots of sliced garlic. The recipe she used was similar to this Garlic Daal I blogged about last year.
Eeek! Turn the heat down Mum!
I had some Grilled Fish, Chimichurri Sauce and a Corn Salsa.
I wonder how spicy these will be??
Nothing gets me more excited to cook than fresh fruit and veg - it all looks so vibrant!

Friday: Time to organise my bulging book of handwritten recipes!
I love to handwrite wherever possible. I think in todays modern world it becomes so easy to just type everything, so I like to write sometimes too :)
Lunch was this Thai Noodle Soup which I'll be sharing this week too.

It was so yummy and fresh - it was the broth that made it!

My mum was cooking a curry with Lamb, Cauliflower and Potato. Kind of a cross between this and this.
