Lamb Mince Okra Curry (Keema Bhindi)

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

After all those desserts from last week, it's time for something a little more savoury.

We start this week with another one of my mothers recipes. This is her Keema Bhindi or Lamb Mince Okra Curry.
Her Keema recipe is one of the most popular posts on this blog, and recently I shared with you, her Okra Curry recipe. This time though she has combined both the lamb mince and okra to create this savoury, fragrant and juicy curry. Serve this with roti or naan for a weeknight meal with a difference!

Okra, previously: Okra Curry

Ingredients needed to make this dish include vegetable oil, okra, onion, tinned chopped tomatoes, green chillies, salt, red chilli powder, ground coriander, ground turmeric, crushed ginger, crushed garlic, lamb mince and fresh coriander.

Bismillah, let's begin!

First, take 1 pound of Okra (also known as ladies fingers), wash and allow to dry. Chop them, and do not wash after that.

Take a deep saucepan, and heat up 1/2 cup of Vegetable Oil.

Add in the okra.

Stir fry for 10 minutes.

Remove with a okra with a slotted spoon and put onto a plate.

To the hot oil ..

..add 1 Large Chopped Onion.

Stir fry until the onion is lovely and golden brown.

Next, pour in 1/2 tin of Chopped Tomatoes.

Stir fry for a minute or two.

Time to spice things up with:
1 teaspoon Red Chilli Powder
1 teaspoon Salt
2 teaspoons Ground Coriander
1/4 teaspoon Ground Turmeric
1/2 teaspoon Crushed Ginger
1/2 teaspoon Crushed Garlic

Add to the pan.

Stir fry for a few minutes.

Throw in 4 Jalapeno Chillies. You could also use normal green chillies too.

Fry the masala for a few minutes.

Add in 3/4 pound of Lamb Mince.

Stir it in.

Bring to the boil and cover. Simmer on low heat for 15 minutes.

Uncover ..

.. and stir fry on a high heat to dry out the curry.

Then, add in a good handful of Fresh Coriander, chopped.

Stir in.

Finally, add the okra back in.

Gently mix them in, and cover for 10 minutes on a low heat.

And, then it's ready!

Serve with hot roti and plain yoghurt!
