Easy Strawberry Ice Cream

Assalamu alaikum wa rahmatullahi wa barakatuhu!

It was 25 degrees here today - practically a heatwave by British standards.




 But not as hot as some places. Anyway, ice cream was called for and since I had a glut of strawberries in the house, I decided to make homemade Strawberry Ice Cream.


Last week I had a bit of a disaster trying out homemade cinnamon ice cream. Not one to accept defeat, I tried again this week with strawberry. On the first try, the traditional method turned into another disaster because I over-boiled the custard.
Then, I thought, hey, ice cream is just custard and flavouring. So, why not try with normal custard that we use to drown our cake in. I tried it and it was a success, alhamdulillah. 
All you need is custard which has been chilled and fresh strawberries. 
I churned mine in an ice cream machine but I think this would still work if your froze it and stirred it a few times in between - let me know how it works out!


And, to be honest, the strawberry custard tastes so good before being frozen that you might just serve it as it is.

The ingredients you'll need are just custard and strawberries.

Bismillah, let's begin!


First, the custard. Cook up or buy 1 and 1/2 pints of Custard. I used custard powder to make mine. Allow it cool slightly, and then chill completely in the fridge.

Take 1 pound of Strawberries.

Remove the green stems and quarter them. Place in a food processor.

Blend until smooth. Add a little water, if needed.

Put the mixture into a sieve over a clean bowl.

Sieve until you are left with a smooth puree. 

Now, take your cold custard.

Since mine was slightly lumpy, I mixed it in the KitchenAid until smooth.

Pour in the strawberry puree and mix.

Once mixed, taste! If it needs more custard or strawberry, add it in.

I churned mine in the ice cream machine until it was frozen. You can buy the same machine as me here.

Once churned, pop it into the freezer to freeze a little more. 
This ice cream tastes creamy and at its best a few hours after freezing. 


Serve with more strawberries and enjoy on hot English spring day!

Easy Strawberry Ice Cream

Ingredients – serves approx 4-6

1 and ½ pints Custard, chilled

1 pound Strawberries

Method

Chill the custard until completely cold.

Hull and quarter the strawberries. Blend until smooth and then pass through a sieve.

Mix the custard and strawberry puree together.

Churn in an ice cream machine until frozen or place in the freezer for a few hours, stirring every now and then.


Serve with sliced strawberries!
