Gingerbread Pancakes

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful


This recipe is for Gingerbread Pancakes. These are spiced with ginger and cinnamon, and are fluffy and moist. Serve them with warm maple syrup and hot coffee for a delicious weekend breakfast - something to take away those winter blues!



A Simple List of Ingredients:

1. Self-Raising Flour

2. Sugar
3. Baking Powder
4. Ground Ginger
5. Ground Cinnamon
6. Salt
7. Vanilla Flavouring
8. Milk
9. An Egg

Bismillah, let's begin!




I made these on a Sunday morning (these pancakes are perfect for Sunday mornings), after witnessing this beautiful winter sunrise. I love all sunrises but there is just something about a winter one!




On to the pancakes! Place 8 ounces (226 grams) of Self-Raising Flour into a mixing bowl.




Add 3 tablespoons of Sugar.



1 teaspoon of Baking Powder




1 teaspoon of Ground Cinnamon




1 teaspoon of Ground Ginger (or a little more, if you want it extra gingery!)




And, a pinch of salt.




Mix well.




Make a well in the centre by pushing the flour up the sides of the bowl.




Next, take 1/2 pint of Milk.




Mix well with a wooden spoon. Actually, you can use any spoon but who doesn't love a good old wooden spoon?




Then, pour in a good splash of Vanilla Flavouring. I'm always a little heavy handed with the vanilla - I love the stuff!




And, finally crack in 1 Egg




Mix well.




Now, you don't have to do this, but I like to pour my pancake batter into a measuring jug - that way it's easier to pour into the pan.




Heat a few tablespoons of Vegetable Oil or Butter if you're that way inclined. Pour a few tablespoon fulls of batter into the pan. 
Allow them to cook on a medium heat for a minute or two, and until little bubbles appear.




Then, flip!




Allow them to cook for a minute or so more until golden brown, and then remove to a plate. 



Now, my preferred method of serving sweet pancakes is to drown them in warm maple syrup. Nothing can beat it in my opinion! What do you guys like with your pancakes? Sugar? Lemon Juice? Or the dreaded Nutella?



So, that's it! By the time I had finished making these, the sun had properly risen so I decided to enjoy them on the deck - but then I realised it was January, and not such a good idea!

What You Need

·     8 ounces (226 grams) Self-Raising Flour
·     3 tablespoons Sugar
·     1 teaspoon Baking Powder
·     1 teaspoon Ground Ginger
·     1 teaspoon Ground Cinnamon
·     Pinch of Salt
·     Few drops of Vanilla Flavouring
·     ½ pint Milk
·     1 Egg
·     Few tablespoons of Vegetable Oil, to fry
·     Warm Maple Syrup, to serve

What To Do

1.   Put the flour, baking powder, sugar, ginger, cinnamon and salt into a mixing bowl, and mix. Make a well in the centre.

2.  Stir in the milk, vanilla and egg.

3.   Heat the oil in a frying pan. Pour in a few tablespoons of batter for each pancake. Cook on a medium heat until little bubbles appear. Flip them over and cook for another minute until golden brown.

4.  Drizzle with warm maple syrup, and serve with hot coffee!
