Samosa Plate

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for a Samosa Plate which is a crushed samosa, topped with a spicy chickpea mixture. Then, drizzled with yoghurt chutney and tamarind chutney, and all sorts of extras like lemon juice, fresh coriander, green chillies and onions. It's really delicious and takes the humble samosa from a snack or starter to a meal in itself.


A Simple List of Ingredients:

1. Vegetable Oil
2. Onions
3. Tomatoes
4. Passata
5. Salt
6. Red Chilli Powder
7. Chaat Masala
8. Ground Turmeric
9. Water
10. Chickpeas
11. Jalapeno Chillies
12. Fresh Coriander
13. Any Chutney
14. Green Chillies
15. Lemon Juice

Bismillah, let's begin!


First, to make the chickpea curry, heat a few tablespoons vegetable oil in a pan, and add one peeled and finely sliced onion.



Cook until golden brown on medium heat.



Add one finely chopped tomato



Add a splash of passata



For the spices, take:
1/2 teaspoon salt
1/2 teaspoon ground turmeric
1/2 teaspoon red chilli powder
1/2 teaspoon chaat masala



Add the spices, and stir to combine.



Add a splash of water, and cook until the tomatoes begin to break down.



Add a can of chickpeas, and make sure you drain them first.



Add a sliced jalapeno chilli



Simmer for 5 minutes.



To finish, sprinkle on fresh chopped coriander.



To assemble, take a samosa. I used my Pakistani chicken samosa.



Crush or smash the samosa.



Cover with some of the chickpea curry.



Sprinkle on some lemon juice.



Drizzle with the chutney of your choice.



Sprinkle on chopped coriander, chopped green chillies and sliced onion.
Serve straight away!
