Mexican Grilled Corn

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Mexican Grilled Corn. If you love grilling sweetcorn then you have got to try this recipe. It is so simple and so tasty that you'll wonder why you didn't make this sooner!

A Simple List of Ingredients:

1. Sweetcorn
2. Mayonnaise 
3. Cream Cheese
4. Butter
5. Red Chilli Powder
6. Smoked Paprika

Bismillah, let's begin!


Take four corn on the cob, and boil them in boiling water for 10 minutes.



Drain out the water, allow the corn to cool and become completely dry.



Whilst the corn is cooling, make the topping. Place 3 tablespoons mayonnaise into a mixing bowl.



Add 3 tablespoons cream cheese.



Take 2 tablespoons butter, and melt it and then pour into the mixing bowl.



Add 1 teaspoon red chilli powder, or to taste.



Stir everything well to combine, and taste for seasoning. You may want to add salt.



By now the corn should be cool enough to handle, and if it's still wet then pat dry with a paper towel. 
Grill the corn on an open gas flame or under a grill under charred and crispy on all sides.




Next, take wooden skewers.




And, snap them in half.



Insert a skewer half into either side of the grilled corn. This step is optional but it does make the corn easier to hold.



While the corn is still hot, spread liberally and on all sides with the cream cheese mixture.




Finally, take smoked paprika.



Sprinkle the corn with the smoked paprika, and serve immediately! I recommend having some paper towels to hand when eating these as it can get quite messy but it's so delicious and worth it.
