BBQ Chicken Salad

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for BBQ Chicken Salad. Summer is almost coming to an end so make the most of it by enjoying a final barbecue meal. If the weather is playing up, then grill the chicken indoors on a grill pan like I did, slice up some fresh salad and drizzle on my homemade ranch dressing for a creamy but refreshing meal.
This recipe will serve approximately 4 people.

A Simple List of Ingredients:

1. Chicken Breast
2. Dark Soy Sauce
3. Olive Oil
4. Sweet Chilli Sauce
5. Golden Syrup
6. Tomato Ketchup
7. Barbecue Sauce
8. White Wine Vinegar
9. Cajun Seasoning
10. My Homemade Ranch Dressing
11. Tinned Sweetcorn
12. Salt and Pepper
13. Cherry Tomatoes
14. Cucumber
15. Lettuce
16. Green Coriander


Bismillah, let's begin!



To make the barbecue marinade, take:

1 tablespoon dark soy sauce

1 tablespoon olive oil

2 tablespoons sweet chilli sauce

2 tablespoons golden syrup

3 tablespoons tomato ketchup

1 tablespoon barbecue sauce

1 tablespoon white wine vinegar

1 teaspoon Cajun seasoning



 Take 2 large chicken breasts and cut slits into them. Add all the above ingredients to the chicken, and stir well. Cover and leave to marinade in the fridge overnight or at least a few hours.






Next, take a tin of sweetcorn, and drain the water. Season with salt and pepper, and drizzle with a little olive oil, and toast in a hot pan.



Next, prepare the salad. Chop a handful of cherry tomatoes.



Slice a cucumber in halves.



Roughly slice some Romaine lettuce or any other crisp lettuce.



And, last of all, finely chop a handful of fresh coriander



Preheat a grill pan, and grill the marinaded chicken breasts for about 10-15 minutes until cooked through. Brush the remaining marinade on the chicken while it's cooking.



Once cooked, place the chicken onto a plate and allow them to rest for a few minutes.



Slice the chicken breast into large chunks.



To put the salad together, place a handful of the chopped lettuce into a large bowl ...



.. a handful of sliced cucumber ...



.. a few sliced cherry tomatoes ..



.. a few spoons of the toasted sweetcorn ..



.. throw in some of the sliced chicken ..



.. and sprinkle on some chopped coriander.



Drizzle on the ranch dressing - as much as you like!



Give everything a good stir, making sure that the dressing coats everything well.



Serve immediately for a delicious lunch!
