Strawberries and Cream Cake

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Strawberries and Cream Cake. Fresh strawberries and cream are a famous British summer combination, and nothing else is as classic as a sponge. Put the two together and you have this light sponge layered with strawberries and fresh whipped cream which is the perfect end to a summer tea or lunch.

A Simple List of Ingredients:

1. Caster Sugar
2. Eggs
3. Self-Raising Flour
4. Double Cream
5. Strawberries
6. Vanilla Flavouring
7. Icing Sugar


Bismillah, let's bake!

Preheat the oven to Gas Mark 5.



Grease and line two sandwich tins.



Place 3 ounces caster sugar into the bowl of a Kitchen Aid mixer.



Crack in 3 eggs.



Using the whisk attachment ..



.. whisk on high speed ..



.. until the mixture is pale and thick enough to leave a trail when the whisk is lifted out.



Sift in 3 ounces self-raising flour.



Stir in gently. Make sure to do it gently otherwise all the air that has been whipped into the eggs and sugar will go.



Divide the mixture between the two tins. Bake in the preheated oven at Gas Mark 5 for 20-25 minutes until risen and golden brown.



Once baked, remove from oven and allow to cool ..



.. then place onto a wire rack to cool completely.



Next, take fresh strawberries.



Slice the strawberries but leave a few whole for decoration.



Next, take double cream.



Place 1/2 pint double cream into a mixer bowl.



Take vanilla flavouring and icing sugar.



Add 1 teaspoon vanilla flavouring and 2 tablespoons icing sugar to the cream.



Using the whisk attachment, whisk the cream ..



.. until thick.



To assemble, place one cake onto a cake stand.



Spread on a layer of the whipped cream.



Cover with sliced strawberries.



Top with the second sponge.



Spread more whipped cream on top.



Decorate the top with sliced and whole strawberries.



Dust with icing sugar.



The Strawberries and Cream Cake is ready to serve.
