Individual Strawberry Shortcakes

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Individual Strawberry Shortcakes. Last week I received a box of extremely fresh and sweet strawberries from Austria. I decided to bake these Strawberry Shortcakes with them, and they turned out so yummy and delicious - a real crowd pleaser! 

A Simple List of Ingredients:

1. Plain Flour
2. Sugar
3. Butter
4. Oranges
5. Double Cream
6. An Egg Yolk
7. Strawberries
8. Baking Powder
9. Salt

Bismillah, let's bake!

Preheat the oven to Gas Mark 4.


Place 1 and 1/2 cups plain flour into a Kitchen Aid bowl.



Add:
1/4 cup sugar
2 teaspoon baking powder
1/4 teaspoon salt



Mix to combine.



Add 1/2 cup cold butter.


Mix in the mixer until the mixture resembles fine breadcrumbs.



Take 1 egg yolk, and 1/2 cup double cream.



Add to the mixture.



Mix just until a dough forms.



Tip the dough out onto a lightly floured surface.



With your fingers, bring the dough together, and form a rectangle about 1/2 inch thick.



Using a biscuit cutter or any round object, cut out into circles. Keep bringing the dough together, and reforming until it's all used up.



You should get about 6 rounds depending on the size of your cutter. Place onto a greased and lined baking tray.



Brush the tops with a beaten egg.



Sprinkle over some sugar.
Bake in the oven at Gas Mark 4 for 20 minutes.



Once the shortcakes have been baked, allow to cool completely.



Take 1 box fresh strawberries, and slice.



Add 2 tablespoons sugar.



Add the zest of 1 orange.



Add the juice of 1 orange.



Stir to combine.



Take 1 carton double cream.



Whisk until soft peaks appear.



To assemble, take a shortcake.



Slice in half through the middle.



Place a dollop of cream onto one side.



Top with a few strawberry slices.



Top with the other shortcake half.



Add another dollop of cream on top.



Finally, top with a whole strawberry, and dust with icing sugar to serve! These shortcakes make a great alternative to scones at teatime - I hope you give them a try!
