Chicken and Potato Cutlets

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Chicken and Potato Cutlets. They are a spiced chicken and potato mixture shaped into patties, and then rolled in breadcrumbs before being cooked. The cutlets are a wonderful change from burgers and kebabs, and can be eaten alone or put into sandwiches.
On a separate note, I would like to tell you about my other blog - British Muslim Girl. I've only just started writing it so it's still in the early stages, but I will keep you guys posted on it inshallah.
Now, back to the cutlets!


A Simple List of Ingredients:

1. Boiled Potatoes
2. Shredded Cooked Chicken
3. Crushed Red Chilli 
4. Dried Fenugreek
5. Salt
6. Ground Cumin
7. Crushed Black Pepper
8. Fresh Coriander
9. Onion
10. Green Chillies
11. Breadcrumbs
12. Beaten Egg
13. Vegetable Oil

Bismillah, let's begin!


Into a large mixing bowl, place 8 small potatoes, which have been peeled and boiled in salted water, and then mashed.




Add 1 pound boneless chicken which has been boiled for about 15 minutes, in enough water to cover it, and then been shredded




Add 1 tablespoon crushed red chilli ..




.. 2 tablespoons dried fenugreek leaves ..




.. 1 teaspoon salt ..




.. 1 teaspoon ground cumin ..




.. 1/2 teaspoon black pepper ..




.. a handful chopped fresh coriander ..




.. 1 peeled and chopped onion and 3 chopped green chillies ..




Mix everything together really well until combined. 




Take about 8 ounces breadcrumbs. You may need more.




And, take 2 beaten eggs.




To cook, shape the mixture into patties.




Coat in the beaten egg.




And, coat in the breadcrumbs.




Shallow fry in a pan with a little oil until golden brown.




Serve straight away with fries and ketchup or in a sandwich!
