Creamy Tomato Soup

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Creamy Tomato Soup. I'm not a huge fan of soups but due to the current snowy weather here, I've been converted. This is a really simple but delicious soup which is perfect for lunch.

A Simple List of Ingredients:

1. Butter
2. Garlic
3. Onion
4. Carrot
5. Vegetable Oil
6. Plum Tomatoes Tin
7. Dried Oregano
8. Vegetable Stock
9. Double Cream
10. Salt and Pepper

Bismillah, let's begin!



Place 1 tablespoon softened butter into a plate.



Add 2 crushed garlic cloves.



Stir to combine.



Finely dice 1 onion.



Finely dice 1 carrot.



In a large soup pot, heat 2 tablespoons vegetable oil with the garlic butter.



Add the diced onions and carrots.



Stir to combine.



Cook onions and carrot until softened.



Add 1 tin plum tomatoes.



Add 2 teaspoons dried oregano.



Add 1 pint vegetable stock.



Bring to the boil, and then cover and simmer for 20 minutes.



This is the soup after 20 minutes.



Add a few tablespoons double cream.



Stir to combine.



Blend the soup until smooth.



Place back on the heat.



Season with salt and pepper, to taste.



Stir to combine.



Serve with a drizzle of cream. This soup is really good with a grilled cheese sandwich.
