Cherry Tomato and Mushroom Pasta

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for Cherry Tomato and Mushroom Pasta. It is a delicious and quick pasta dish. The sauce is made in the amount of time it takes to boil the pasta. This is a really tasty weeknight meal, and is creamy but without adding any cream whatsoever.

A Simple List of Ingredients:

1. Olive Oil
2. Chicken Salami
3. Penne Pasta
4. Crushed Garlic
5. Mushrooms
6. Salt and Pepper
7. Cherry Tomatoes
8. Butter
9. Cheese
10. Fresh or Dried Basil

Bismillah, let's start!



First, cook 6 ounces penne pasta in salted water according to the packet instructions.




Meanwhile, make the sauce, heat 2 tablespoons olive oil into a large pan.




Add 3 ounces sliced chicken salami. I added this because I had it in the fridge and it added more flavour, but you can leave it out.




Brown the chicken salami until crispy.




Remove the salami, and set aside.




Add a drizzle of olive oil, if needed.




Add 2 crushed garlic cloves, and saute for a minute until lightly golden and fragrant.




Next, add 14 sliced mushrooms.




Season with salt and pepper, to taste.




Stir to combine.




Cook for 6 minutes, until the mushrooms have cooked down.




Add 8 ounces cherry tomatoes which have been halved.




Allow the cherry tomatoes to cook for 5 minutes.




Next, add 6 tablespoons of the pasta cooking water




Stir in and turn up to high to allow the sauce to thicken for 1 minute.




Add the drained penne pasta.




Toss to combine.




Add 1 tablespoon butter.




Add the chicken salami, from earlier.




Add a handful grated cheese.




Mix until well combined.




Scatter over a little fresh or dried basil, whichever you have.




Serve straight away, and enjoy!
