Baked Italian Penne

Assalamu alaikum wa rahmatullahi wa barakatuhu!



This recipe is for a Baked Italian Penne. It is a baked pasta dish, using penne pasta and minced chicken, chicken salami and boiled eggs. The dish is great for a weeknight meal, on a cold day!

A Simple List of Ingredients:

1. Red Onions
2. Olive Oil
3. Chicken Mince
4. Tinned Plum Tomatoes
5. Dried Oregano
6. Butter
7. Plain Flour
8. Milk
9. Hard-Boiled Eggs
10. Chicken Salami
11. Penne Pasta
12. Mozzarella cheese
 13. Cheddar cheese
14. Salt and Pepper

Bismillah, let's begin!



To make the chicken sauce, peel and slice 2 red onions.




Add a few tablespoons olive oil to a pan, and add the sliced red onions.




Saute the onions until soft and golden brown.




Add 1 pound chicken mince.




Cook the chicken mince until brown.




Add 1 tin plum tomatoes.




Break up the tomatoes, and stir well.




Add 1 teaspoon dried oregano, and salt and pepper, to taste.




Bring to the boil.




Simmer for 30 minutes, or until the chicken is cooked.




Next, to make the white sauce, melt 2 tablespoons butter.




Once the butter is melted, add 2 tablespoons plain flour.




Cook the butter and flour for a few minutes.




If it starts to stick, add a drizzle of vegetable oil.




Next, start adding 1/2 pint milk. After each addition of milk, stir it in.




Season with salt and pepper, to taste, and allow the sauce to thicken.




To assemble, place 6 ounces cooked penne pasta into a large bowl. To cook the pasta, boil in salted water according to packet instructions.




Add 3 ounces cooked sliced chicken salami. Cook it in a pan, with a little oil.




Add 2 peeled and sliced hard-boiled eggs.




Take a large oven dish, and spread a little chicken mince at the bottom.




Add the rest of the chicken mince mixture to the bowl.




Add a handful of grated mozzarella cheese to the bowl.




Stir everything well to combine.




Pour in the white sauce.




Stir to combine.




Place the pasta into the oven dish.




Top with grated Cheddar cheese.




Bake in a preheated oven at Gas Mark 5 for 30 minutes, until golden brown.




Serve with a fresh salad for a tasty weeknight dinner!
