Not So Traditional Shepherds Pie

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for a Not So Traditional Shepherds Pie. I named it this because I used chicken instead of lamb, and I added my own mix of spices and seasonings. A traditional shepherds pie is made with lamb, whilst a cottage pie is made using beef. But the topping of both is the same: mashed potatoes!

A Simple List of Ingredients:

1. Onions
2. Garlic
3. Vegetable Oil
4. Chicken Mince
5. Salt
6. Red Chilli Powder
7. Tomato Ketchup
8. Tomato Puree
9. Dried Oregano
10. Tabasco Sauce
11. Worcestershire Sauce
12. Tomatoes
13. Frozen Peas
14. Vegetable Stock
15. Mashed Potatoes
16. Cheese

Bismillah, let's start!

Heat a few tablespoons vegetable oil in a large pan, and soften 2 chopped small onions and 2 crushed garlic cloves.

Once the onions and garlic have softened, add 1 pound chicken mince.

Cook the chicken mince by stirring and breaking it up until it is brown and cooked.

Next, add salt and red chilli powder, to taste.

Add 1 tablespoon each of tomato ketchup and tomato puree.

Add 1 teaspoon dried oregano.

Next, add 1 teaspoon Tabasco sauce, and 1 tablespoon Worcestershire Sauce.

Add 2 chopped tomatoes.

Add a handful frozen peas.

Stir everything to combine.

Add 1 pint vegetable stock.

Stir, bring to the boil and then cover and simmer on low for 30 minutes.

Leave the lid a little open to allow the steam to escape.

When it's cooked, taste for seasoning and adjust if needed.

Take a large oven dish, and add all the cooked chicken.

Top with mashed potatoes and a little Cheddar cheese.

Finally, top with sliced tomato rounds. My mum always does this when baking a Shepherds Pie.

Bake in a preheated oven at Gas Mark 5 for 40 minutes until golden brown.

Serve hot with gravy!

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for Falafel. Falafel is a fried patty made with ground chickpeas and spiced using ground coriander and cumin. It is a really simple recipe, and is great in a sandwich bun with a salad and harissa yoghurt dip.

A Simple List of Ingredients:

1. Onion
2. Garlic
3. Vegetable Oil
4. Chickpeas
5. Salt
6. Ground Cumin
7. Ground Coriander
8. Dried Parsley
9. An Egg

Bismillah, let's begin!

To start, take 1 small chopped onion and 1 crushed garlic clove.

Heat a few tablespoons vegetable oil in a pan, and add the onion and garlic. Fry on a low heat until softened.

Place the softened onion and garlic into a large bowl. 

Add 1 can chickpeas, drained.

Add salt, to taste.

Add 1 teaspoon ground cumin and 1 teaspoon ground coriander.

Mash the mixture with a potato masher or a fork, until the chickpeas have broken down.

Add 2 teaspoons dried parsley.

Finally, add an egg.

Stir to combine.

Heat more oil in a pan, and form the mixture into patties. Be careful as the mixture will be quite sticky. Fry in the hot oil for 4 minutes each side or until golden brown and firm.

Serve straight away garnished with lemon wedges and fresh coriander. Use the falafel like burgers and add to bread rolls with salad and harissa yoghurt.

Pound Cake With Orange Glaze

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is for a Pound Cake With Orange Glaze. A Pound Cake is a cake which is traditionally made with a pound each of flour, butter, eggs and sugar.  

A Simple List of Ingredients:

1. Butter
2. Sugar
3. Vanilla Flavouring
4. Eggs
5. Self-Raising Flour
6. Salt
7. Icing Sugar
8. Water
9. Orange Zest

Bismillah, let's start!

Preheat the oven to Gas Mark 3.

To start, place 8 ounces butter into the bowl of a KitchenAid.

Add 8 ounces sugar.

Cream the butter and sugar on high speed for 8 minutes, until pale and fluffy.

Add 1 teaspoon vanilla flavouring.

Take 4 eggs.

Lightly beat the eggs.

Add half the beaten eggs to the bowl, and beat in, and then add the rest.

Beat in the eggs.

Next, add 8 ounces self-raising flour.

Finally, add 1 teaspoon salt.

Stir in the flour and salt until combined.

Grease and line a loaf tin, and pour in the batter.

Bake the cake in the preheated oven at Gas Mark 3 for 1 hour until golden brown and firm.

Once baked, remove from tin and allow to completely cool on a wire rack.

To make the orange glaze, place 6 tablespoons icing sugar into a bowl.

Add a few drops of water.

Stir until combined and quite thick.

Add the zest of 1 orange.

Stir to combine.

Pour the orange glaze over the cooled cake, and spread it evenly across.

Allow the glaze to set for about 10 minutes, and then slice and enjoy! This cake is perfect with a cup of tea!
