Rock Cakes

Assalamu alaikum wa rahmatullahi wa barakatuhu!

These are a dad favourite, and so simple to make. Don't be put off by the name because they actually come out really soft and moist.

A Simple List of Ingredients:

1. Self-Raising Flour
2. Ground Cinnamon
3. Brown Sugar
4. Butter
5. Orange Zest
6. Golden Sultanas
7. Milk
8. An Egg

Bismillah, let's begin!

First, as always, preheat your oven to Gas Mark 4.

Sift 10 ounces self-raising flour into a large mixing bowl.

To the sifted flour, add 1/4 teaspoon ground cinnamon.

To the flour and cinnamon, add 2 ounces brown sugar.

Next, add 3 ounces butter, chopped.

Rub in the butter with your fingers.

Next, take the zest of 1 orange.

And take 6 ounces golden sultanas.

Add the orange zest and the golden sultanas to the mixing bowl.

Next, measure out 125ml milk.

Add the milk to the bowl.

Take 1 beaten egg.

Add the beaten egg to the bowl.

Stir together but do not over mix.

Drop teaspoon full of mixture onto a greased baking tray.
Bake for 20 minutes and then allow to cool.

Be sure to give your dad one of these. He'll love them!


Rock Cakes


·     10 ounces (283 grams) Self-Raising Flour
·     ¼ teaspoon Ground Cinnamon
·     2 ounces (56 grams) Brown Sugar
·     3 ounces (85 grams) Butter, chopped
·     Zest of 1 Orange
·     6 ounces (170 grams) Golden Sultanas
·     125 ml Milk
·     1 Egg, beaten


1.  Preheat the oven to Gas Mark 4. Grease and line a baking tray.

2.  Sift the flour into a large bowl. Add the cinnamon, sugar and butter. Rub in the butter with your fingertips.

3.  Add the orange zest, golden sultanas, milk and egg. Mix until a dough forms.

4.  Place teaspoon full of the dough onto the baking tray. Bake for 20 minutes and then, allow to cool.

5.  Serve!

Chocolate Apples

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe isn't really a recipe, but just a really fun and creative thing to do. Chocolate apples always remind me of this time of year. Nothing says autumn more than a fresh apple on a stick covered in chocolate and other goodies.

A Simple List of Ingredients:

1. Milk Chocolate
2. Apples
3. Rainbow Hundreds and Thousands

Bismillah, let's start!

The first ingredient you'll need is some good old milk chocolate.

In a microwavable bowl, break up 3/4 of a bar of milk chocolate. This will be enough for about 2 apples.

Melt the milk chocolate in the microwave for a minute. Once again, try not to eat it with a spoon!

Next, take an apple of your choice and a lolly pop stick. Make sure the apple has been washed and dried.

Take the stick and push it into the bottom of the apple.

Like this!

Take the apple and start coating it in the melted chocolate.

Coat the apple until it is completely covered in chocolate and then hold it above the bowl until the excess chocolate drips off.

I decided to decorate my chocolate apple with just some simple rainbow hundreds and thousands. But you can decorate them any way you want, with some chopped nuts, chocolate buttons, toffee pieces, coconut, chocolate chips ... basically anything you like!

Once it's decorated, let the apple sit for about half an hour until the chocolate has fully set, then enjoy!!


Chocolate Apples


·     ¾ of a bar of Milk Chocolate
·     2 Apples
·     Sprinkles or any other decoration


1.    Melt the chocolate in the microwave.

2.   Wash and dry the apples.

3.    Push a lolly stick into the bottom of the apple.

4.  Dip the apple into the chocolate. Shake off the excess, and then decorate with the sprinkles.

5.   Allow to set and cool completely before serving!

Thumbprint Cookies

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is a simple cookie recipe with a twist. 
The addition of jam makes these a really juicy bite!

 A Simple List of Ingredients:

1. Butter
2. Caster Sugar
3. An Egg
4. Vanilla Flavouring
5. Plain Flour
6. Ground Almonds
7. Strawberry Jam
8. Lemon Curd

Bismillah, let's begin!

First, preheat your oven to Gas Mark 4 / 180C. 
Into a large mixing bowl, weigh out 4 ounces softened Butter.

Add 5 ounces Caster Sugar to the butter.

Beat the butter and sugar together until light and fluffy.

Next, take 1 Egg and separate it. Save the egg white because you'll need it for later.

Add the Egg Yolk to the butter mixture.

The next ingredient is vanilla flavouring. 

Add 1 teaspoon Vanilla Flavouring to the mixture. 

Beat the mixture well to combine.  

The next ingredient is plain flour.

Weigh out 6 ounces Plain Flour. Add to the mixture, and mix well.

The next ingredient is ground almonds.

Spread 1 ounce Ground Almonds on a plate and add 1 tablespoon Sugar, and mix.

And the Egg White left over from before. This needs to be whisked lightly with a fork in a separate bowl. 

 Take both the ground almond mixture and the whisked egg white.

Meanwhile, roll walnut-sized pieces of dough into balls.

Take one ball, and dip into the egg white.  

Then roll in the ground almond and sugar mixture. 

Place the ball onto a greased baking tray, and make a deep indentation with your thumb on the cookie. 

Repeat this method with all the dough balls.
Bake in the preheated oven at Gas Mark 4 / 180C for 10 minutes

Meanwhile, take a few tablespoons Lemon Curd.

And a few tablespoons Strawberry Jam.

Take the cookies out of the oven after the 10 minutes, and carefully (because it's hot!) press down again on each indentation.

Fill each thumbprint with jam!
Bake again in the oven for about 12 minutes.

Leave to cool and enjoy!

Thumbprint Cookies


·     4 ounces (113 grams) Butter, softened
·     5 ounces (141 grams) Caster Sugar
·     1 Egg
·     1 teaspoon Vanilla Flavouring
·     6 ounces (170 grams) Plain Flour
·     1 ounce (28 grams) Ground Almonds
·     1 tablespoon Sugar
·     Few tablespoons Lemon Curd
·     Few tablespoons Strawberry Jam


1.     Preheat the oven to Gas Mark 4 / 180C. Grease and line a baking tray.

2.   Beat the butter and sugar until creamy.

3.    Separate the egg. Add the egg yolk to the butter mixture, along with the vanilla. Beat well.

4.   Add the flour and mix well.

5.   In a separate bowl, mix the ground almonds and 1 tablespoon of sugar. Whisk the egg white with a fork.

6.   Roll the dough into walnut sized pieces.

7.   Dip each ball in the egg white and then roll in the ground almond and sugar mixture.

8.    Place onto the baking tray, and make an indentation  with your thumb. Repeat with all the balls.

9.   Bake in the oven for 10 minutes.

10.     Remove from the oven, and fill each indentation with either the lemon curd or strawberry jam.

11.  Bake for another 12 minutes. Allow to cool before serving!
