Penne With Cajun Chicken

Assalamu alaikum wa rahmatullahi wa barakatuhu!

In the Name of Allah, Most Gracious, Most Merciful

This recipe is for one of my favourite types of pasta - penne.


 
It is really simple and great for when you have guests over.

A Simple List of Ingredients:

1. Chicken Breast

2. Sunflower Oil
3. Cajun Seasoning
4. Salt
5. Bell Peppers
6. Mushrooms
7. Onions
8. Penne Pasta
9. Double Cream
10. Tomatoes
11. Fresh Basil Leaves

Bismillah, let's begin!


The first ingredient is chicken, of course. I used 2 Chicken Breasts, cut up into slices.

The first thing to do is marinade the chicken.
Put the chicken into a large bowl and add a splash of Sunflower Oil.

The next ingredient is Cajun seasoning.

Add 4 teaspoons Cajun Seasoning and Salt, to taste.

Stir it all together. Then cover with cling film and let it marinade overnight, if possible.

The next ingredient is 1 Bell Pepper. I was in the mood for an orange one, but you can choose whichever colour you want.

Thinly slice the pepper.

 Next, take 8 Mushrooms. You can use more or less depending on how big of a mushroom fan you are!

Thinly slice the mushrooms.

Heat a few tablespoons of Sunflower Oil in a large saucepan, until the oil is hot.

Add the chicken to the hot pan.

Cook the chicken until golden brown. Make sure you taste it to see if it's cooked.

Take the chicken out and put it on a plate.

Peel and thinly slice 1 Onion.

Heat a little oil in the same pan, add the sliced onions and peppers and stirfry for about 10 minutes, until they are soft.

Add the sliced mushrooms and salt, to taste, and cook for a further 5 minutes.

Now, time to boil 3 cups of pasta. I used penne but you can use whatever you have on hand.

Boil the pasta in a large pan of water, according to the packet instructions.

Drain the pasta but keep some of its cooking liquid.
Add the pasta to the vegetables.

Add a ladleful of the pasta cooking water to the pasta and vegetables, and bring to a boil.

Next, pour in half a carton of Double Cream, and stir to combine.

 Next, take 2 Tomatoes.

And slice them up!

And lastly, take a handful of Fresh Basil Leaves.

Chop the fresh basil and add it with the sliced tomatoes and the cooked chicken to the pasta.

Heat and stir through to combine.

And serve!

Penne with Cajun Chicken

Ingredients

For the Marinade
·     2 Chicken Breasts, cut into strips
·     Few tablespoons Sunflower Oil
·     4 teaspoons Cajun Seasoning
·     Salt, to taste

For the Pasta
·     1 Bell Pepper, thinly sliced
·     8 Mushrooms, thinly sliced
·     Few tablespoons Sunflower Oil
·     1 Onion, peeled and thinly sliced
·     3 cups Penne Pasta
·     ½ carton Double Cream
·     2 Tomatoes, sliced
·     Handful of Fresh Basil Leaves

Method

1.         First, marinade the chicken. Place the chicken, Cajun seasoning, salt and sunflower oil into a bowl and mix well. Leave to marinade for a few hours or overnight.

2.         For the pasta, heat the oil in a pan. Add the marinated chicken and cook until golden brown and cooked through. Set aside on a plate until needed.

3.         Heat a little more oil in the same pan. Add the onions and peppers and stir fry for 10 minutes until soft. Add the mushrooms and salt, and cook for 5 minutes.

4.         Cook the pasta according to packet instructions. Drain and add to the vegetables. Make sure to reserve some of the cooking liquid.

5.         Add a ladleful of the cooking liquid to the pasta and vegetables and bring to the boil.

6.         Finally, add the double cream, tomatoes and fresh basil. Mix well and heat through. Serve!
