Chicken Kebabs

Assalamu alaikum wa rahmatullahi wa barakatuhu!

This recipe is a simple one for chicken kebabs.



 These kebabs can be eaten by themselves with a salad or in a sandwich.
This recipe uses chicken mince but you can, of course, use lamb mince if you prefer.

A Simple List of Ingredients:

1. An Onion
2. Green Chillies
3. Garlic
4. Fresh Coriander
5. Tomato
6. Chicken Mince
7. Red Chilli Powder
8. Ground Turmeric
9. Ground Coriander
10. Ground Cumin
11. Salt
12. Gram Flour
13. Sunflower Oil 

Bismillah, let's get started!


First, peel a large Onion.

Roughly slice the onion.

Take 6 fresh Green Chillies.
My mother freezes her chillies - that's why they look a bit frozen. 

Peel 3 Garlic Cloves.

Wash a handful of Coriander. Make sure you leave the stalks on because they have the most flavour. 

And, take one Tomato.
  
Roughly chop all of the above ingredients and place them into a blender. Blend until a smooth paste is formed.

Place the paste into a large mixing bowl.
This paste makes a really good chutney as well. Try it with some chappati!

Add 2 pounds of Chicken Mince.
As I said before, you can use lamb mince. 

Add 1 teaspoon Chilli Powder, or more if you want.

Add 1/2 teaspoon Ground Turmeric.

Add 2 teaspoons Ground Coriander.

Add 2 teaspoon Ground Cumin.

Add 1 teaspoon Salt.

The next ingredient is gram flour. This is used to bind the mixture together. 

Add 5 tablespoons Gram Flour


Add 1/4 cup Sunflower Oil.

Now, it's time to get your hands dirty and mix everything together. If you want to, you can wear disposable gloves whilst doing this or use a spoon.

Heat a few tablespoons of Sunflower Oil in a large frying pan. You could also use a grill pan.

Shape the kebab mixture into patties and fry until golden brown on both sides.

Like this!

Drain the kebabs on some paper towels and then serve with a salad and some green chutney.

Chicken Kebabs

Ingredients

·      1 large Onion, peeled and roughly chopped
·      6 Green Chillies, roughly chopped
·      3 Garlic Cloves, peeled
·      Handful of Fresh Coriander, roughly chopped
·      1 Tomato, roughly chopped
·      2 pounds Chicken Mince
·      1 teaspoon Red Chilli Powder
·      ½ teaspoon Ground Turmeric
·      2 teaspoons Ground Coriander
·      2 teaspoons Ground Cumin
·      1 teaspoon Salt
·      5 tablespoons Gram Flour
·      ¼ cup Sunflower Oil

Method

1.   Place the onion, green chillies, garlic, fresh coriander and tomato into a blender. Blend until a smooth paste forms.

2.  Put the paste into a mixing bowl, and add all the other ingredients.

3.  Mix everything well using a spoon or by hand.

4.  Shape the mixture into patties, and shallow fry in oil until golden brown and cooked through.

5.  Serve immediately with green yoghurt chutney, pitta bread and salad.
